Anadama Bread
Page 321 in the Bread and Bread Machine Bible.
As usual, I only make a small loaf of bread here.
Ingredients
- 200ml Water
- 45g Molasses (I substituted with brown sugar)
- 1 tsp Lemon Juice
- 275g White Bread Flour
- 65g Wholemeal Bread Flour
- 40g Polenta (Coarse Corn Meal Flour)
- 25g / 2 tbsp Butter
- 1 1/2 tsp Salt
- 1 tsp Easy Bake Yeast
Method
Add all the ingredients in the order listed, and use the bread machine's "basic" setting.
Notes
I used Semolina instead of the Polenta, which still gave the yellow colour to the bread.
The high sugar content give a tasty, dark crust.
I accidentaly used 1 tbsp of lemon juice, rather than 1 tsp. Tasted fine to me. I should try 1 tsp next time, and see if the sweetness is too much for my sweet-averse taste.
