Method

  1. Finely chop the onion, chilli and coriander.
  2. Add the zest of the lime and the salt to the chopping board.
  3. Smear the mixture with the side of the blade to form a paste.
  4. Peal and do-stone the avocados and mash with a fork. As we are aiming for a chunky, don't mash it too much.
  5. Fold in the other ingredients, i.e. the avocados, the paste, and the oil.
