Onion Focaccia






  • 30ml Olive Oil
  • ½ red Onion
  • 5 Sage leaves
  • 2 tsp coarse sea salt
  • coarsely ground black pepper


  1. Put all the ingredients for the dough into the machine, and use the "Dough" setting.
  2. Knock back, and flatten the dough slightly
  3. Sprinkle over the sage and onion, and kneed.
  4. Shape into a ball, flatten it, then roll it out
  5. Place in a oiled tin (25-28 cm in diameter)
  6. Over with clear film and leave to rise in a warm place for 20 minutes
  7. Poke holes into the dough with your fingertips to make deep dimples over the whole surface.
  8. Meanwhile, preheat the oven to 200°C
  9. Cover and leave to rise for another 15 minutes
  10. Drizzle with olive oil and sprinkle with onion and sage leaves, salt and pepper.
  11. Bake for 20-25 minutes

Serve warm.
