Pear Marmalade
Ingredients
- 2kg Pears, cut into chunks
- 2kg Sugar
- The Juice and thinly sliced rind of 3 Oranges
- The Juice and thinly sliced rind of 2 Lemons
- Chopped Walnuts (Optional)
- Maraschino Cherries (Optional)
Method
Place the pears and sugar in a large saucepan and mix well. Leave to stand until some juice forms. Over a medium heat, stir until the sugar dissolves. Continue to cook until is starts to thicken slightly.
Meanwhile, juice the oranges and the lemons. Cut the peel into thin slices and steam until soft.
Add the lemon and orange juice to the pears together with the softened rind, bring to the boil and continue to boil for about 30 minutes, stirring.
Remove from the heat and Test for a Set.
Skim any scum from the surface, add the nuts and cherries, mixing well, and ladle into warm jars.
Notes
The first time I tried this, I used more oranges than suggested, and didn't use the walnuts or the cherries.

Only used 1.5Kg Sugar. Didn't peal off all of the pith of half of the oranges.
