Vegetable Chilli
Ingredients
- 2 Onions (chopped)
- 1 clove of Garlic
- 3 sticks of Celery
- 1 green Pepper (diced)
- 225g Mushrooms (sliced)
- 2 Courgettes (sliced)
- 400g Kidney Beans
- 400g Tomatoes (chopped)
- 150ml Passata
- 2 tbsp Tomato Purée
- 1 tbsp Tomato Ketchup
- 1 tsp Chilli Powder
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- Salt and Pepper to taste.
Topping
- Natural Yogurt
- Cayenne Pepper
Method
- Mix the onions, garlic, celery, green pepper, mushrooms and courgettes in a saucepan.
- Add the kidney beans, tomatoes, passata, tomato purée and ketchup.
- Add the spices, salt and pepper.
- Mix well
- Bring to the boil, cover and simmer for 20 - 30 minutes stirring occasionally, till the veg is just tender.
- Meanwhile cook some rice!!!
- Serve immediately with natural yogurt sprinkled with cayenne pepper. Garnish with coriander sprigs.
Notes
We made Raita instead of plain yogurt.
